Experience the new flavors of Slovenian cuisine.
Nestled against the walls of a nearly thousand-year-old castle, a new Slovenian cuisine is taking shape. Chef Marko Pavčnik creates seasonal dishes using local ingredients, embracing wild foods and brewing with beer.
From the Tabor Castle, first mentioned in records in 1145, you can enjoy a beautiful view of Laško and the surrounding area. The castle has a rich history, having been owned by the famous Celje Counts, who held jousting tournaments here.
The castle was in ruins for almost 200 years, but has now been beautifully restored. The restaurant occupies two floors of the castle tower, and in warmer months, they also serve on the outdoor terrace. Chef Marko Pavčnik, along with his wife Katja, runs the restaurant.
Marko is one of the younger chefs who is significantly influencing the development of Slovenian cuisine. He has gained recognition for his creativity and the use of fresh, often wild ingredients.
He is particularly passionate about lesser-known herbs that he gathers from the surrounding forests and meadows. His kitchen features wild hops, nettles, acacia, hare's-foot clover, and many other ingredients that most people have never heard of.
He enjoys challenging stereotypes, not with new, modern, and unseen ingredients, but with forgotten and newly discovered ones. His excellent knowledge of cooking techniques allows him to successfully translate his ideas onto the plate.
